ELABORATION
A base wine is first elaborated from the white early harvest white grape
“listán blanco” variety. The stalk-free grapes are
pressed and the obtained must, after removing the soil, is fermented
at a controlled temperature. The wine obtained is then submitted to
clarification, tartaric stabilization when cold, and filtration. A second
fermentation takes place in the bottle in a cellar at the controlled
temperature of 14ºC. The wine is aged in the bottle for twelve
months before carrying out the manual operation of degorgement following
the traditional method of elaboration. METHODE CHAMPANOISE.

CHARACTERISTICS
Straw yellow tinged with green, brilliant and fine bubble forming a
crown. Varietal aromas, fennel with a touch of breeding. Smooth and
