Real
PRODUCTION
A sweet wine made with grapes of the Malvasia Real variety, overmatured
on the vine. The stalk-free grape is cold settled for a few hours. It
is then pressed and the must obtained is first soil-cleaned and then
fermented at a controlled temperature. The wine is chilled at 3ºC,
finalizing the fermentation and producing the exact equilibrium between
the alcohol and residual sugars of the unfermented grape. The wine obtained
is then submitted to three or four decantations, including clarification,
tartaric stabilization when cold and filtration before finally being
bottled.

Volatile acidity: 0.3 gr/l

CHARACTERISTICS
Its sweet flavour comes from non-fermented traces of natural grape sugar.
Excellent aromas of this grape variety, well structured taste and persistent
in month.
