The winery´s installations influence the quality of its wine. Our installations have a functional design and are incorporated into the natural landscape to maintain natural temperatures.

The winery is made up of a reception area, a tasting room, business offices and a wine production area. The grapes from the viticulturers are delivered to the two floor vintage area. They are directly transported in the original grape cases to insure optimal quality. They are unloaded manually onto pallets which are later weighed on a platform scale. The cases are then brought to a machine which automatically deposits the grapes onto a belt and the washes the cases. The manual selection process can now take place.
A censor simultaneously monitors different quality parameters, such as alcoholic content, pH level, acidity and temperature. The stripped grape is cold rinsed for several hours prior to being introduced to the pneumatic press. This procedure results in lesser volume of must but one of greater quality.

The obtained must is then transported to the appropriate stainless steel tanks which are located in the fermentation and storage on the first floor. The winery employs all of the latest technology to monitor “the essential parameters”: individual temperature controllers, continuous fermentation controllers, plaque filters, diatom soil filters, decanting pumps, cooling equipment, cleaning equipment…

The winery has a fully equipped laboratory and continuously controls the quality of its must and wines.

The aging room and wine cellar are found in the basement of the winery. Once again we take advantage of the temperature and humidity conditions of the natural environment which offer optimal conditions for this function. The room is temperature controlled, thus anytime the temperature rises above 16º the temperature is automatically adjusted. The wine cellar has a capacity of 30,000 bottles of sparkling wine in various stages.

The bottling room is equipped with a bottling train for both wine and sparkling wine. There is also equipment which automatically positions, washes, fills, corks, capsules, tickets and places the bottles in boxes. The final product is in perfect conditions for transport.

Our tasting room is located near the winery´s entrance. From there a wonderful view of the Valley of Guimar can be enjoyed while tasting our selection. The visitor can also read about the different awards our wines have received throughout the years.
