Blanco
Limited production (2,000 litres)
WINEMAKING
Wine made with listán blanco grapes from the vineyards located
in the highest area of our Region. After carefully selecting the grapes,
they are de-stemmed and macerated cold some hours before they are pressed.
The flower must thus obtained is fermented in new 225-litre American
oak barrels after being racked. The wine is gently stirred on a daily
basis along with its lees during and after fermentation. After being
aged for three months in the barrel, the wine undergoes reductive ageing
in the bottle where it is rounded off.
